One of my favorite meals to make is Chicken Burgers. They have so much flavor and are lower fat (really less everything but taste) than beef burgers. I like to serve them with homemade sweet potato or white potato baked fries.
Here's my loose recipe:
Find or make ground chicken, one breast per person appx
Have fresh herbs on hand: basil, parsley, chives- chop 'em up
Salt & Pepper
Tomatoes, Lettuce, Avocado, Cheese
In large mixing bowl, combine meat, herbs, spices, garlic, beaten egg and Worcestershire. Combine well and make patties.
Drizzle olive oil in skillet, heat it up on medium heat, add burgers. Add a lid to help them cook through a little faster. Flip 'em. When they are browned lightly on both sides and cooked through, remove from pan.
Serve on bun, with a slice of provolone cheese, tomatoeslices, lettuce (or fresh spinach is really good on top) and avacado slices. Yum!!
Next up: Using leftover chicken burger patties in lunch boxes.
