The original recipe comes from La Leche League's cookbook WHOLE FOODS FOR THE WHOLE FAMILY called One Pan Granola. I have adapted it over the years to fit what I like.
Apricot Date Spiced Granola
3/4 c olive oil
1/2 c water
3/4 molasses (or real maple syrup or honey)
5 c rolled oats
1 c whole wheat flour
1/2 soy flour
1-2 tsp vanilla (or coconut)
1/2 wheat germ
1/2 c sesame (or pumpkin, sunflower, etc.)
1 c almonds (or pecans, walnuts, etc.)
2 tsp pumpkin pie spice (or cinnamon)
3/4 c dried dates and diced dried apricots (if you use raisins- add after cooking)
In a deep large pan on the stovetop, mix oil, water and molasses over low heat. I turn on two burners and lay pan across them. Stir until thinnned. Add in dry ingredients. Stir well, so all the wet is incorporated into all the dry.
Pop in a 325 degree over for 2 hours. VERY IMPORTANT** Stir with a large spatula every 15 minutes. Taking care to scrape corners. Watch the granola so it doesn't get too brown, which will taste bitter.
Cool, turning occasionally. When completely cool, store in an airtight bag or container.
