40 Gloves of Garlic


Chicken with 40 Cloves of Garlic

Here is my recipe for my FAVORITE chicken. Break out the fancy bread to spread the roasted garlic on with this meal. Don't be afraid- the garlic becomes sweet and less pungent when roasted. Yum!

Whole chicken, separated
2-3 Heads of garlic, appx. 40 cloves- separate and leave peel on
1/4 c Olive oil
Salt and pepper
1 C Chicken Broth
1 C White Wine or Apple Cider Vinegar

Preheat oven to 420 degrees. In a small baking dish, pour 1 Tb olive oil in bottom, place garlic in and drizzle a little more olive oil. Cover with foil and place in oven for 15 minutes.

In meantime, pour rest of olive oil in a large iron skillet on stove top. Heat at medium heat. Dry chicken pieces with paper towel, sprinkle with salt and pepper. Add chicken to hot skillet (I use two skillets because mine is just not quite large enough). Brown chicken for 5 minutes and turn over. Brown another 5 minutes. Remove chicken to a plate to rest.

Take garlic out of oven. Add broth and wine/vinegar to chicken skillets. Scrape bottom of pan and let reduce for 5 minutes. Add garlic to skillet and then place chicken back in. Bake in oven for 20 minutes until thermometer in chicken breast reads 180 degrees.

Take out of oven and let rest. To serve- Squeeze garlic cloves out of paper onto bread or potatoes, etc. So yummy and you won't get sick or be attacked by vampires for at least 2 weeks!!
